Take off the leaves and the bottom few inches of the core of the cauliflower. Slice cauliflower into small pieces that are 1/4 inch thick.

Put the cauliflower, chicken stock, and butter in a large zipper-lock bag or a bag that can be sealed with a vacuum. Use the water immersion method or a vacuum sealer on the “wet” setting to close the bag. Set the timer for 45 minutes on sous vide immersion cooker and put the food in the water bath.
Step 4
Take the bag out of the water bath when the timer goes off. Put a fine-mesh strainer over a large bowl and pour the stuff into the bag. Save the liquid from cooking.
Step 5
Put the strained cauliflower into a blender. Blend until smooth, adding cooking liquid to thin as needed. I use about a quarter cup. It should be less thick than mashed potatoes. Salt to taste, and then serve.

Cooking a whole cauliflower using sous vide is an easy and fool-proof way of having perfect results. Simply place the cauli in a bag in the water bath, and use a circulator to adjust its temperature. The result is that all parts of the cauliflower will be cooked evenly. To finish off, you can transfer it to the oven under the broiler or an air fryer. For extra flavor, pour some hollandaise over it. You can also make asparagus at the same time but keep in mind that their cooking times differ.

Put the cauliflower in a gallon-sized freezer bag along with as many butter knives or spoons as you need to keep the cauliflower submerged.

Use the Archimedes principle (the way water moves) to get rid of the air in the bag before you seal it. I found it easier to get the air out if I push the bag down with the cauliflower on the bottom and the knives on top.
Step 4
Set the water to 185 β and let it get to that temperature. (I heat the water after putting the cauliflower in the water bath because it’s safer to push it into the water.) Put 45 minutes in the timer.
Step 5
When the time is up, take the cauliflower out of the bag, and then the sous vide. Put the cauliflower on a sheet pan, spread a thin layer of mayonnaise over the outside, and then sprinkle a lot of seasoning on it.
Step 6
Broil the cauliflower for 5β9 minutes or until the outside turns color. Then, cut it up and serve it with the sauces you like.
